There are many theories and techniques on how to make Rosé. Saignée is one. Macerate is another.

Fred decided to get a light crush (hence the sanitized boot stomp) and then let the juice sit on the skins (macerate) for the night. Remember, most red juice gets its color from the skins. The early results were beautiful. See next episode.
